Sweet and spicy chicken Cap Kipas Udang

            Ingredients A

  • ½kg of chicken (cut into small pieces)
  • 3 tablespoons of CAP KIPAS UDANG  Chilli Sauce
  • 2 tablespoons of CAP KIPAS UDANG  Tomato Sauce
  • 10 black peppercorns
  • Salt and sugar according to taste
  • Spring onions and celery leaves for the garnish

Ingredients B

  • 20 dried chillies
  • 1 onion
  • 2 cloves of garlic
  • 1 inch of ginger

Ingredients C

  • 1 stalk of lemongrass (sliced)
  • 2 cloves of shallot (sliced)
  • 1 star anise
  • 3 cloves
  • 2 cardamoms
  • 1 cinnamon stick


  1. Fry the chicken pieces until they are semi-cooked. Set it aside.
  2. Blend all ingredients B.
  3. Heat some oil and fry all ingredients C until the mixture becomes aromatic.
  4. Put in all the blended ingredients B and stir well.
  5. Add the CAP KIPAS UDANG Chilli and Tomato Sauces, salt and pepper.
  6.  Next, put in the pre-fried, half-cooked chicken. Cook until the gravy thickens.
  7. Put in the spring onions and celery leaves, then stir well. Turn of the flame.
  8. It is now ready to be served!
